I think the biggest reason that people notice the difference is that they get used to one brand of a product for a while. With chemistry/pharma its pretty interesting in that they can have the same chemical molecule, but they can vary +/- 20% in active ingredient amount.

Bigger than that though, is the little secret that not everyone is aware of, but that all chemical structures are not the same even with the same chemical, alprazolam for example. Different companies can have a different makeup of it, even though it is still the same chemical alprazolam, its chemical structure can vary slightly from mfg to mfg. (assuming all quality controls the same and same level of active ingredient)

Then when you add in different binders and fillers into the equation, that can change how a person's body perceives the drug, and the bioavailability can be affected as well because of binders/fillers and chemical makeup of the active ingredient. So someone gets used to taking one brands version of a medication and then change, they have a different reaction to the med. One may get more tired and sedated, or may get more anxiolytic relief and not tired, or may have paradoxial reaction where they are hyper or get energy from it, all from changing from one to another.

This is a fairly broad explanation of it, but it can be researched more in depth. Just thought I would put out a synopsis if people are interested can look into it further. Some are more sensitive to this, and thus some people will notice bigger differences between diff generics than others. I think that is why some are more adamant about one vs another that other people are (outside of the psychological aspect)
